Top chef to open Mad Fish eatery

A LEADING chef and big fan of celebrity chef Gordon Ramsey has taken the helm in the kitchen at the White Sands Hotel, in north Dublin.

Paul Phillips, this year's All Ireland Young Chef of the Year, tied his apron strings this week and got down to business at the Portmarnock eaterie, where he will soon open a 100-seater restaurant, Mad Fish.
